Well adapted to the desert climate, Mesquite has been a food staple for the indigenous people and animals of the southwest for thousands of years and the gluten-free flour ground from the pods sells for over $10/lb. The wood from the trees is a beautiful, sought after (and expensive) hardwood and is well known for the pleasent aroma and flavor it imparts when burned for cooking (mesquite bbq). The folliage is velvety to the touch (hence the name), has thorns, and flowers apear in the spring, from which the legumes develop, in a cluster. The velvet mesquite is the largest of the mesquite species. It can be a low-branched, broad spreading thorny shrub, or small tree with a well-developed canopy.
